Margarines made from interesterified fat may pose a bigger health risk than margarines made from trans fats

Vegetable oils may be converted from liquids to solids by the hydrogenation reaction. Margarines are partially hydrogenated or "hardened" in this way to make them solid at room temperature. Unfortunately this process leads to the formation of trans fats which are implicated in many conditions such as diabetes, cancer heart disease and many other chronic degenerative disorders. Trans fats can also be found in some breakfast cereals, baked goods such as doughnuts and Danish pastry, deep-fried foods like french-fried potatoes, imitation cheese, and confectionary fats.

Because of the unhealthy reputation of trans fats food manufacturers are developing new techniques to "harden" vegetable oils without them containing trans fats. Interesterification is an alternative technique that is used by some margarine manufacturers as part of the process to solidify vegetable oil without producing any trans fats.

In this study dietary trans fats and interesterified fats were compared to a saturated fat for their impact on cholesterol values and blood glucose levels. The study included 30 volunteers whose diets contained a percentage of the various fats for four week periods.

The fats in each diet were based on:
(i) Palm olein (saturated fat diet).
(ii) Partially hydrogenated soybean oil (trans fat diet).
(iii) Fully hydrogenated fat blend subjected to chemical interesterification (interesterified fat).

The study found:
(a) Compared to the saturated fat diet, levels of the beneficial high density lipoprotein (HDL) cholesterol were 7.6% lower in those on the trans fat diet.
(b) Compared to the saturated fat diet, levels of the beneficial high density lipoprotein (HDL) cholesterol were 9.1% lower in those on the interesterified fat diet.
(c) Compared to the saturated fat diet, levels of blood glucose rose by a harmful 5.1% in those on the trans fat diet.
(d) Compared to the saturated fat diet, levels of blood glucose rose by a harmful 18.7% in those on the interesterified fat diet.

The results of the study show that interesterified fat lowers the levels of the beneficial high density lipoprotein (HDL) cholesterol even more than trans fat.

Interesterified fat also raised blood glucose levels significantly higher than trans fat which strongly suggests that interesterified fats found in margarines and processed foods could lead to an even higher risk of diabetes than the trans fat containing foods.

Is interesterified fat as bad as trans-fat?

Man-made trans fats are known to be extremely harmful to health. They are banned in some countries and are been replaced by another man-made fat called interesterified fat.

(a) the studies clearly reveal negative biological effects on lipoproteins, blood glucose, insulin, immune function, or liver enzymes when an intake of 7% is reached.
(b) one can assume that effects are initiated, even if undetected, at a lower intake, similar to the situation with trans fats.

Hayes concludes: "more research is warranted to determine the appropriateness of interesterified fat consumption, particularly before it becomes insidiously embedded in the food supply similar to trans fats and intake levels are achieved that compromise long-term health".

Recipe of the day

Bacon-Wrapped Pork Tenderloin with Cinnamon Yams

Ingredients:

1lb Pork Tenderloin                                                                                              Food Mall: Pork
All Natural Pork Loin Chops Center Cut bone in 8. 1' Thick8 Bacon Strips
1 Large Yam
1 tsp. Sea Salt
1 tsp. Black Pepper
1 tsp. Ground Cinnamon

Instructions:
Preheat oven to 415F.

Heat an oven proof saute pan over medium-high heat.

Lay out a piece of plastic wrap, measuring a few inches longer than the pork tenderloin.

Lay the bacon pieces vertically along the length of the wrap, overlapping them slightly. Using 1/2 tsp. salt and 1/2 tsp pepper, season the pork tenderloin. Place the seasoned pork tenderloin on top of the bacon, so that bacon and tenderloin are perpendicular. Using the plastic wrap, wrap the bacon tightly around the tenderloin. If you have the time, wrap tightly to seal and refrigerate for an hour ( you may also prepare this in advance for cooking the following day).

Remove the pork from the plastic wrap. Use toothpicks (it doesn't have to look pretty, they'll come out before slicing) or twine to secure the bacon (otherwise it has a tendency to curl up and unravel...not good).

Add the pork to the heated pan and sear for 5 minutes. While the pork is searing, quarter the yams lengthwise and slice 1" thick. Gently turn the pork over and sear for another 5 minutes. Then turn the roast and sear on the remaining 2 sides until the bacon fat is rendered and begins to crisp, about 5 minutes per side.

Add yams and toss in rendered bacon fat to coat. Sprinkle with remaining salt and pepper.

Transfer the pan to the preheated oven. Roast for 20 minutes.

Remove pork from the pan and transfer to a cutting board to rest. Sprinkle yams with cinnamon, toss to coat, and transfer back to the oven while pork rests. Roast for 5 minutes.

Remove yams from oven, remove toothpicks from the pork and slice.

Interestification of fats may cause heart disease

The author found that the interesterification processing procedure of fats may lead to heart disease.

There are two basic methods for producing interesterfied oil blends. The most common uses a chemical catalyst, such as sodium methoxide or ethoxide (dangerous and highly toxic industrial solvents), or hazardous metallic sodium or sodium-potassium alloy. The first three require heat of 80o C to 120oC to produce interesterified fatty acids. The product must then be neutralized (to remove the caustic catalyst), bleached (to get rid of the resultant dark brown color) and deodorized (a process which can actually introduce trans fats into the mix).

Another method uses enzymes to produce the interesterified fats. It is more expensive but results in less loss of oil through the formation of soaps, esters and mono- and di-glycerides.

Whichever method is used, rest assured that this is a highly industrialized process involving heat that begins with oils that have already been subjected to a highly industrialized process. The resulting product may be trans-free, but it will still contain chemical residues, hexanes and many dangerous breakdown products full of free radicals.

This post features an article about interesterified fat and a recipe for crock pot chicken.

INTERESTERIFIED FAT - when ‘No Trans Fat’ is worse

Barely have consumers - and health authorities - woken up to the dangers of trans fats when we are now told of a new, possibly greater threat. The new substance to watch out for is interesterified fat.

First, let me tell you how I remember the spelling of this word - combine together “interest” and “terrified” but spell “terrified” with only one “r”. Actually, it is made up of the words “inter” and the chemical term “esterified”, meaning “formed into ester”.

Basically, it is an attempt by food scientists to produce oils with “no trans fats”.

What they do is hydrogenate the oils fully. The oils become fully saturated and there are no trans fats left. But fully hydrogenated oil is hard and inedible. So the smart aleck scientists mix it with liquid oils and put it through other chemical processes to create a semi-solid grease like margarine and vegetable shortening.

Interesterified fat - the bottom line

Enough of the chemistry.

The bottom line is this… Early scientific reports -- one of which was released in mid-January 2007 by joint-researchers from Malaysia and the UK -- suggest that interesterified fat is far more harmful than trans fats.

Interesterified fat was found to depress the level of HDL (good cholesterol) more than trans fat.

In addition, interesterified fat raised blood glucose levels and depressed the level of insulin. This strongly suggests that interesterified fat could lead to diabetes.

So be extra careful of products labelled “No Trans Fat” especially when they contain fully hydrogenated oils.

Interesterified fat - the research

The research on interesterified fat -- which is gaining popularity as food producers try to meet the criteria of having “No Trans Fat” -- was conducted in Malaysia and at Brandeis University, UK.

Biologist and nutritionist K.C. Hayes, from Brandels University, collaborated on the research with Dr. Kalyana Sundram, Nutrition Director for palm oil research at the Malaysian Palm Oil Board in Kuala Lampur.

Both Hayes and Sundram are experts on human lipid metabolism and were instrumental in the development of Smart Balance® Buttery Spreads, a blend of vegetable oils that improves the cholesterol ratio.

The study compared trans-rich and interesterified fats with an unmodified saturated fat, palm olein, for their relative impact on blood lipids and plasma glucose.

Thirty human volunteers participated in the study, which strictly controlled total fat and fatty acid composition in the subjects' diet. Each subject consumed all three diets in random rotation during four-week diet periods.

This study further confirmed previous studies in animals and humans, indicating once again that trans fats negatively affect LDL and HDL cholesterol.

The interesterified fat had a similar, though weaker impact on cholesterol. However, the effect of interestified fat on blood glucose was stronger than that of trans fat, raising blood glucose levels by 20 percent within a month.

Their research findings were published online in Nutrition and Metabolism.

Interesterified fat - unnatural stearic acid

Interesterified fat is rich in stearic acid, which is the type of saturated fat found in cocoa butter as well as in beef.

Stearic acid, together with palmitic acid (from palm oil) are said to be the "preferred food for the heart", providing energy for the heart to work. Some studies also suggest that stearic acid helps lower cholesterol levels.

Incidentally, the properties of stearic acid also makes it beneficial for the manufacture of candle, soap, plastic, oil pastel, cosmetics etc. It is also used for softening rubber.

BUT... the stearic acid in interesterified fat is not quite the same as naturally occurring stearic acid. Because the processs of creating interesterified fat unnaturally rearranges the position of individual fatty acids on the fat molecule.

Interesterified fat - research implications

Dr Hayes said the research:

"One of the most interesting aspects of these findings is the implication that our time-honored focus on fat saturation may tell only part of the story.

"Now it appears that the actual structure of the individual fat molecule is critical, that is, the specific location of individual fatty acids, particularly saturated fatty acids, on the glycerol molecule as consumed seems to make a difference on downstream metabolism of fat and glucose.”

Added Dr Kalyana Sundram:

“This is the first human study to examine simultaneously the metabolic effects of the two most common replacement fats for a natural saturated fat widely incorporated in foods. As such, it is somewhat alarming that both modified fats failed to pass the sniff test for metabolic performance relative to palm olein itself.”

Dr Kalyana Sundram said further studies were needed as “the apparent adverse impact on insulin metabolism is a troubling finding."

Interesterified fat - what should consumers do?

Scientists working for the food industry keep coming up with strange, weird and terrifying stuffs. As consumers, we need to keep abreast of these developments and watch out for the dangers.

Otherwise, just stick to traditional foods that humans have been eating for thousands of years, and we will be all ok. In the case of oils and fats, just stick to:

• saturated fats like lard, butter, ghee, beef tallow, goose fat…. coconut oil and palm oil.

• monounsaturated fats like olive, sesame, and peanut oils.

Note also that:

• Polyunsatured oils like corn, soybean, etc had not been traditionally used for cooking. Most were introduced only during the last century.

• Canola, a monounsaturated fat widely touted as being the “healthiest oil” is another modern scientific invention, produced through genetic manipulation.
One product to be careful about is peanut butter, some of which are now made with fully hydrogenated oils. These could well be interesterified fat. If you want a healthy peanut butter, look for those that contain just one or two ingredients, either only peanuts, or peanuts and salt.

Recipe of the day

Crock Pot Chicken

Ingredients:
• 1 chicken
Kosher.com - Glatt Kosher Whole Chicken Pullet (4 Pack)
Food Mall: Chicken
• 2 carrots, sliced thinly
• 2 med onions, sliced thinly
• 2 celery stalks with leaves, chopped
• 1/2 t salt
• 1/2 t black pepper
• 16 oz chicken broth
• 2 c water
• 1 t basil, crushed
• 1 t oregano
• 1 t garlic powder

Instructions:
In a slow cooker, put in half of the chicken broth. Place half of the carrots, celery and onions in the bottom. Place the chicken (back side down) in the slow cooker. Add remaining broth,vegetables, salt and pepper, basil, oregano and garlic. Place lid on cooker and cook on low heat for 7-10 hours or high heat for 2.5-3.5 hours.
