Beta-carotene absorption requires dietary fat

This post includes a summary of a paper published in the American Journal of Clinical Nutrition 1993 Feb;57(2):175-81 and a recipe for mustard marinated steaks.

The study found that a single 51-mg dose of beta-carotene given in the absence of dietary fat resulted in no detectable change in serum beta-carotene. The same dose administered with 200 g fat increased serum beta-carotene 2.5-fold at 40 hours.

The author concluded that: "the data indicated that beta-carotene absorption requires dietary fat and is enhanced by administering with meals".

Recipe of the day

Mustard Marinated Steaks
 
Ingredients:
Omaha Steaks 4 oz. Top Sirloins
Food Mall: Sirloin Steaks
4 sirloin steaks

Mustard Marinade:
15ml/1tbsp white wine vinegar
30ml/2tbsp olive oil
45ml/3tbsp Dijon mustard
15-30ml/1-2tbsp freshly chopped flat-leaf parsley
Salt and freshly milled black pepper

Method:
1.In a large shallow bowl combine the marinade ingredients together. Add the steaks and coat on both sides. Cover and marinate in the refrigerator for 1-2 hours.

2.Brush the excess marinade mixture from the steaks and cook under a preheated moderate grill for 8-12 minutes, turning occasionally.
