Ribeye Steak

Instructions:
■Pat dry and season the steak.
■Preheat the oven to 275 degrees Fahrenheit.
■Place a wire cooling rack on a cookie sheet then put the steak on the cooling rack. This allows hot air to circulate around the entire steak.
■Bake the steak until the internal temperature is 100-110 degrees.
■Drizzle a little oil in a pan over high heat. Just as the pan begins to smoke, drop the steak in the pan.
■Cook the steak for 2 minutes on each side.

The author concludes: "The ketogenic diet is a promising therapy for patients with myoclonic-astatic epilepsy, with over half the children showing a > 50% reduction in seizures, and seizure-freedom in 18%. In drug resistant cases of myoclonic-astatic epilepsy, the diet should be considered early in the course of this syndrome and not as a last resort".

Herby Meat Patties

Ingredients:
450g/1lb ground beef or lamb
Ground Lamb
Food Mall: Ground Lamb
1 small red onion, peeled and finely chopped
10ml/2tsp fresh thyme leaves
30ml/2tbsp wholegrain mustard
Salt and freshly milled black pepper

Method:
1.In a large bowl mix together all the ingredients except the flour.

2.Lightly dust your hands in a little flour and shape into twelve 5cm/2inch patties.

3.Cook on a preheated grill or barbecue for 6-8 minutes on each side turning occasionally until cooked.

Caraballo concludes: "Considering the severity and intractability of seizures in patients with Dravet syndrome, the fact that 10 of the 13 children who remained on the diet had a significant reduction in number of seizures shows that the ketogenic diet is at present an interesting therapeutic alternative. Even in patients in whom seizure reduction was not dramatic, quality of life improved".

Omaha Steaks Boneless Legs of Lamb
Food Mall: Lamb
Ingredients:
450g/1lb lamb leg steaks, cut into 2.5cm/1inch cubes
1 red onion, peeled and cut into wedges
50g/2oz butter
1 sprig fresh rosemary

Method:
Cut the leg steaks into 2.5cm/1inch cubes and thread onto skewers with the onion. Melt the butter and add leaves from the rosemary, brush over the skewers and cook under a preheated grill or barbecue for 12-15 minutes, turning occasionally.

Hot Beef Satays

Ingredients:
450g/1lb beef sirloin, rump or topside steaks, cut into 2.5cm/1inch cubes

For the Marinade:
30ml/2tbsp coconut milk
Omaha Steaks 7 oz. Top Sirloins
Food Mall: Sirloin
1 red chilli, deseeded and finely chopped
1 garlic clove, peeled and finely crushed
Salt and freshly milled black pepper
1 large handful freshly chopped coriander
Extra coriander leaves and finely chopped red chilli, to garnish

Method:
1.Prepare the marinade ingredients in a large shallow bowl.

2.Thread equal amounts of the beef cubes onto 4 short metal or wooden skewers, place into the marinade and coat the beef cubes. Cover and marinate in the refrigerator for 20 minutes.

3.Cook the steaks according to preference on a preheated grill or barbecue, turning once.

4.Serve the satays scattered with extra coriander leaves and chopped red chilli.
